4 center-cut swordfish steaks, about 6 ounces each. one-inch thick
Salt and freshly ground pepper to taste
3 tablespoons olive oil
2 teaspoons soy sauce
1 tablespoon red-wine vinegar
4 sprigs rosemary or 1 teaspoon dried
1 tablespoon finely chopped garlic
2 teaspoons ground coriander
1 teaspoon ground cumin
2 teaspoons grated lemon rind
¼ teaspoon red pepper fiakes
Salt & pepper the steaks
Combine ingredients and pour over both sides. Let sit 15 minutes.
Grill at 500 for 8 minutes, flipping 1/2 way through.
